Peri Peri Chicken

Juice of 2 lemons

2 tbsp paprika powder

2 tsp. salt

1 tbsp. oregano

3 sprigs of thyme

oil (veg or olive)

3 cloves of garlic

1 large knob ginger

4 tbsp vinegar

1 tsp. black pepper


Blend all the ingredients of the sauce

Next, prepare the chicken:


1 large or 2 baby chickens


1,Pour the prepared sauce over the chicken , ( you can make some slits into the chicken) then smoother the chicken well, cover and refrigerate. Allow to marinate at least overnight.

2.When ready to cook, shake the excess marinade off the chicken

then place the chicken on a greased tray, brush some sauce over chicken and pop in a pre-heated oven at 170 C and grill for 25-30minutes turning over depending on size of bird.

3.Make sure to brush the chicken with some of the marinade sauce once more during the grilling so it stays moist.

4.Once done, remove and keep the chicken covered to retain moisture.

Serve your delicious Peri Peri chicken with fries or fresh salad!
