Zim Style Beef Stew Recipe

Ingredients

1/2kgs Beef Chuck or Short cut rib (or mix both)

3 Tablespoon veg oil

1/2 cup passata / freshly chopped tomatoes

I large onion chopped

2 cloves garlic crushed

1 Tablespoon paprika

1 Teaspoon black pepper

1 teaspoon madras

2 maggi cubes

1 oxo beef cube

Salt to season

Method

1. Place washed beef pieces in a large skillet or pot with water, then season with salt, madras, paprika and black pepper. Place on medium heat. Let cook until the meat is tender and soft.

2. Once the meat is tender and while meat stock is drying up, add the cooking oil and begin frying the beef until well browned

3. Once the meat is browned, add onions and garlic and fry until the onion has softened. Add passata /freshly chopped tomatoes and leave to cook for a few minutes. Mix the maggi and oxo cubes and create 1 large cup of stock and pour into the beef.

4. Mix the meat well, taste for seasoning, reduce heat and leave to simmer on very low for a further 20-30minutes. Once done, it should be very tender and the gravy reddish- brown and nicely thickened.
