Zimbo-Tomayo chicken

8-10 Chicken Thighs
All purpose seasoning spice
2 Tablespoons tomato/ ketchup sauce
2 Tablespoons mayonnaise
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon chilli powder
Juice of 1 small lemon

Salt to season

1. In a large bowl, place chicken thighs and set aside.
2. In a small bowl, mix all the ingredients and create a marinade. Pour marinade into the chicken and smoother chicken well. Refrigerate for at least 4 hours.
3. Preheat oven on medium heat. Layer chicken pieces into a lined oven tray.
4. Bake for at least 45 minutes or until golden brown. Serve immediately with salad or a portion of rice

Bake until chicken is golden
Garnish with your favourite herbs
