(Valentine’s Day Ideas)

Whether you and your loved one are going out for dinner or cooking and eating in, it’s really upto you to set the perfect mood or atmosphere for the night. The first one or two years of our marriage, my husband was not keen on celebrating Valentine’s Day. Only later on he finally came out of the cave and now he is the first one to who starts thinking of things to do when V-day is approaching.

Last year, he booked a hotel for us at Hilton Hotel in Reading. That morning I remember vividly, how he went out and came back with a big bunch of flowers and a huge card. I sniffed the flowers excitedly, falling in love with them as they were so beautiful.I never opened the card, a habit that I picked up God-knows where and proceeded to get ready as we were hoping to leave early afternoon for our celebrations. An hour later after I had gotten ready, I decided to do a quick tidy up and put a few things away. I stood next to the table, putting all my favourite things in a clutch bag, clearing the table at the same time that I then reached out for the card. On opening the card I realised it had £100 in it and I had totally blanked it out since my husband handed it to me early that morning.

I was so embarrassed and so angry at myself at the same time. How can I miss such a gift and a heartfelt message that came with the card…..

Anyway this year I have put down a few ideas I came up with and some impeccable dishes for you, for Valentine’s Day that will make your day  perfect..❤️❤️❤️.

This Peanut Butter and Yoghurt Chicken is ideal for the dinner.Add Fried or plain Steamed rice, plantain and a fresh salad of course.

Peanut Butter & Yoghurt Chicken

Ingredients

4-5 chicken breast fillets cut into bite sized pieces
2 tablespoons olive oil
1 tablespoon crushed garlic
1/2 tablespoon crushed ginger
3 tablespoons natural yoghurt
1 medium onion finely chopped
1 teaspoon dried chilli flakes (I used dried chilli flakes in brine)
1/2 a mug/cup of passata tomatoes
3-4 tablespoons smooth peanut butter
2 tablespoons soy sauce
2 tablespoons white wine vinegar
I tablespoon paprika
1 teaspoon ground black pepper
1 jug water
Salt to season

Method

1. In a large skillet, add oil, once oil is heated, add onions, chilli flakes garlic and ginger. Fry slowly until the ginger and garlic have wilted and have fully released their flavours in the oil and the onion is soft and mashy. Add the paprika, black pepper and stir in.
2. Add the passata tomatoes and stir in well until a smooth tomato gravy has been formed. Add the peanut butter and stir in vigorously to about lumps from forming. Add a bit of water, vinegar, soy sauce and continue stirring and season with salt.
3. Stir in the yoghurt, then add the chicken pieces and ensure they are immersed into the sauce.
4. Reduce heat and let the chicken simmer slowly until the sauce has reduced and thickened. Taste for salt and season if needed.
5. When chicken is done, the sauce should be thick ( in a curry consistency) with a red curry like colour.

NB* the calorie content of this chicken is high, so please do have a detox plan in place😃😅.
