With Valentine’s Day round the corner, whether you are cooking at home or eating out, planning ahead and being organised is very important. Come on, it’s a day to celebrate love and nothing ruins such a day like last minute planning and bring disorganised. So this week I will be posting a few ideas on how to make this day special for those that are planning to whip something at home.

Ingredients
2 cups Arborio rice
I litre chicken stock
1 large onion chopped
2 cloves garlic minced
2-3 grated carrots
3 tablespoon vegetable oil
Red , yellow and green bell peppers sliced in a small dice
1/2 tin passata tomatoes
A handful of Fresh Coriander chopped
1 teaspoon turmeric
1 tablespoon paprika
1 teaspoon chilli powder
1 teaspoon ground black pepper
Salt to season

Method
1.Heat the oil in a deep frying pan, then soften the onion and garlic for 5 mins without browning. Add the carrots, bell peppers and passata tomatoes then fry until peppers have softened. Stir in the turmeric , paprika, chilli powder, black pepper and rice until coated by the oils, then pour in the stock. Bring to the boil, then simmer for 15 mins, stirring occasionally with a folk.
2.Tip in the fresh coriander and cook for 5 mins. Check for seasoning and serve immediately with Chicken.
