Prepare Beans (you can used tinned)

Winter Bean Salad

1/4 cup Chickpeas
1/4 cup Black Turtle Beans
1/4 cup Haricot Beans
1/4 cup Borlotti Beans
A pinch of Sea Salt
1/4 cup Sweetcorn
1/2 Red Pepper Chopped

Prepare Beans (you can use tinned)

Mix beans in a large Salad Bowl

For Dressing.

1 tablespoon Rapeseed Oil,
1 tablespoon White Wine Vinegar,
2 tablespoons Lemon Juice,
1/2 Onion chopped
1/2 cup Passata tomatoes
Black Pepper to season
Teaspoon Mustard


1. Mix all beans and peppers in a large salad bowl.
2. Add salt & pepper and set aside
3. Using Rapeseed Oil, sweet onion until soft, then add Passata tomatoes and let cook for a few second. And a drop of water and stir making sure it turns into a rich tomato soup. Leave to simmer on low heat for 3-5mins.
4. Mix in remaining ingredients for dressing in tomato soup and whisk a little. Pour dressing in bean mixture and combine well. Place in refrigerator and serve chilled.
