Garlic Butter Chicken

Nothing does it better than some succulently, delicious perfectly cooked chicken on a Sunday after church in the afternoon or evening for dinner. For me Sundays are for Christ, for family and perfect food. We’ve been fed spiritually and physically we need to be fed too. So here is a perfect chicken recipe fit for a Sunday. Good thing is, you can marinate overnight, cook chicken in the morning while preparing to go to church. Leave it covered tightly with foil on a cool place then when you get home you’ve got chicken ready. You are left to prepare maybe rice, roast potatoes and some nice crunchy colourful salad to go with your chicken.

Garlic and Butter Chicken
Ingredients

500g chicken cutlets
2 tablespoons melted butter
5 cloves garlic crushed

1/2 tsp garlic salt2

1 tablespoon dried parsley
1/2 tsp dried basil
1/2 tsp ginger powder
Salt to season (if needed)

Method

1. Preheat the oven to 190 C/375F/ Gas 5.
2.In a large bowl combine the butter with the crushed garlic,herbs, ginger and garlic salt.
3.Make slits on the cutlets then smoother the cutlets with the mixture. ( you can leave to marinate for 4hours or overnight if you have enough time).
5.Layer the chicken on a lined oven tray and place in the preheated oven. Cook chicken, basting and turning so it’s golden brown on both sides. Cook for 30- 40mins or until chicken is cooked through.

footnotes* If you are making more than 500g of chicken then you will need to double on the ingredients so that the chicken comes out perfectly.
