Muboora Recipe (Pumpkin leaves)

1/2 kg pumpkin leaves, peeled, washed and chopped roughly
I medium onion chopped
3 medium fresh tomatoes chopped
1 teaspoon black pepper
1 tablespoon vegetable oil
I/2 teaspoon bicarbonate of soda
1 teaspoon curry powder (madras)
Salt to season

Method

1. In a medium sized pot, place 1 cup of water and leave until it starts to boil. Add bicarbonate of soda, it should sizzle in the water, creating almost a white foam.
2. Immediately add the pumpkin leaves and leave to cook for a minute or two. Add vegetable oil, onions and tomatoes and stir in mixing ingredients well.
3. Add madras and black pepper then season with salt and leave to cook for 20-25mins until leaves are soft and well-wilted and almost a quarter of stock is left.
4. Serve with sadza while piping hot.
